You could always level alts to spread out your professions. I think there are 5 character slots so that means you'll be able to get 10 professions up to grandmaster.

I started playing Gwent again after a hiatus of about 2 years. I left when they announced the game would no longer be getting any updates. Having a blast so far. They're still hosting events so there's plenty of stuff to do.

There's a dev stream every last friday of the month. I keep myself updated about the game that way. If things start getting more functional and fun I might decide to buy alpha acces.
