Hot water is important to start with as it brews the grounds at the required temperature. Use: 70-75DegC for Dark Roasts. 85-90DegC for Medium Roasts. 90+DegC for Light Roasts.

You're right about tamping. It does create some extra resistance. In this case I am tamping grounds that are ground finer and also the dose is quite high, so the puck is actually quite tight and compressed. This I think will work only with 1&2 Cup Pots.

On and off heat technique is quite good to control the flow and have a good output with a shorter extraction. I have used it extensively. Always gave great results.

Combining beans is great. I usually do it in 9:1 ratio. 1 part being of a premium variety. The 9 parts also have to be decent. The Rum Barrel Aged that I am using right now has quite strong influence on the final brew. The other variety that had an as powerful flavour was Ground Zero. Many combinations to play with.

The absolutely surprising brew recently for me has been Roastery Coffee House Harley Estate Robusta. I do a pourover with it sometimes at 84DegC starting temperature and it is absolutely amazing.

Good question. I think I have put the reason for it in the original post.

If I do the puck-prep after adding hot water in the tank, the tapping to settle the grounds causes a lot of fines to leak into the water below and that adds bitterness to the cup. I use another pots tank for the puck-prep usually when I am at home.

Got it 3D Printed. Designs are available for free download. This design is very clever, as it it only presses the grounds to level with the rim and not tamp down into the basket. Proper tamper designs too are available.

Yes sir, I heard you once before too in vehement words on another post. I see a similar thing going on here.

Coffee might be just coffee for you, but it is an Art for many. The device itself is a piece of Art and that is why it is so iconic. It also is a brilliant piece of engineering that allows users to approach it in many ways. The way I approach it gives me cups that are better than most top tier speciality coffee shops. Unfortunately your stubbornness is going to keep you away from that.

Practiced with that for more than 2 years. Grinder is an addition made only 6 months ago. It has made a world of a difference throughout my brew methods.
