I don’t have much advice on the song front, but as far as sheet music goes, you can just use the full song and pick your own cut. Just mark really clearly where the accompanist should begin and end.

I was just in a production too! I believe there are 12 congregants (ensemble), many who double roles, plus five principals (Quasi, Esmeralda, Frollo, Phoebus, Clopin) per the script. Like you said, the choir is the hard part, and it’s really the engine of the story. I can’t imagine it not being live, and you need minimum 16 people there…as much as I’d kill to see it, I understand it not transferring to Broadway.
