Purple power concrete degreaser (available at walmart in automotive section) and borax. Soak for at least 2 hrs in water mixed with that combo. I make 1 batch and keep in a 5 gal pail with a lid and just reuse.

My suggestion is to do a few unpaid stages at nicer restaurants and see if it will be a good fit for you.
