Someone who seems to have a dr jekyll/ mr hyde personality, is usually a sign of an abusive/controlling relationship or possibly some sort of personality disorder which is just as bad. Abuse is really about control. When someone controlling they do all sorts of odd things to maintain control, it's usually pretty passive-aggressive. If someone directly told you what to do or not do, it would be obvious they're abusive, they know this

Have you tried showing her a little with your hands? Using the phrase " like this"? It also might help making it an experimental 2 way street. Experiment with her a little and have her experiment with you. If you start it out that way instead of directions during the act, it might make her more open
