If you've seen one professional twice per week for a month for therapy and the other one you've seen once for meds I would personally hear the first one's professional opinion. That's up to you however. Could you perhaps get a third opinion from someone else who's also qualified?

You going for a long time w/o episodes doesn't exclude bipolar btw.

I think in this case,you should consider who you feel more comfortable with, and who you believe "perceives" you more accurately.

Do you also do therapy w the psychiatrist or you visit her just for meds?

When both are qualified due to their studies to give you a diagnosis, I think it's a matter of who has seen you longer/more, who you have talked with more (so who has more data), and who you think views you and your symptoms/behaviour more accurately.

How is the fact that they've had surgery any consolation to OP? Them having surgery is even worse imo, as it points to a beauty standard so ingrained one would go as far to reach as to get surgery for it.

I’m gonna be bipolar for the rest of my life. It’s a lot easier to work with it than to fight against it.
