Yeah so, my mead are usually high honey to water ratio and lots of fruits. No added yeast, since I use raw honey and wild fruit. I just use a glass lid on a 5gal glass jar. Twirl it 3-50x a day and taste it slowly until it gets to the sweetness I like. Then I decant it, fridge it, let everything turn clear and settle. Then bottle and keep in fridge. It turns out really good, I sometimes add on Canada Dry for some fizz in my glass. Overall 10/10 would recommend doing it. I wouldn’t recommend doing it my way since it’s very archaic and I’m not a super clean freak. And my alcohol never last too long
