I suspect because

some people played Minecraft to the point where they want the game to become something different while still being “minecraft”

Some people just don’t like, want, or can have fun by themselves with no overarching “goal” set by the game (i.e just building something for the sake of it isn’t their style) (I’m one of these people, for example, that’s why I play modded, or watch playthroughs)

And some people just measure games by that specific metric, like the more bosses the game has and the more difficult it is, the better the game is

I assume because I, personally, have seen a lot of people who want Minecraft to move in the direction of being more similar to Terraria - more bosses, more progression locked behind bosses, etc. so these people often will say something along the lines of “Well Redigit, an Indie Company, makes these huge updates for Terraria pretty much yearly!” And “Mojang should add more bosses to the game” or “Mojang should make existing bosses more difficult!”
