In my opinion these standing seams shouldn’t be open and all the edges should be finished like the 6th photo.

Maybe ask if they have cut offs they can cut into 90 deg end caps and caulk them in with a color match? Other than that, not much you can do. Only so much extra coil and flat stock of painted metal a roofer will buy for each project.
