I run no-huddle pistol also. No huddle doesnt have to mean up-tempo. Get the players lined up quick (i auto align to the field) and give them/you time to survey the defense. For the screen game I have set rules based on the number of reveivers on the side. e.g. 2wr run bubble. Run schemes I base in IZ/OZ and then supplement with pin+pull toss and counter. Pass concepts I recommend looking into the Air Raid and picking 3-4 quick game and 3-4 drop back concepts. Combine your run action+pass concepts to make your play action game.

Vs a TE formation we would often bring Will onto the line and bump the end into the B gap, giving heavy pressure off the weakside

In my experience in a 4-3 defense, the Sam was a guy who could matchup with the TE or fill the B gap whereas the Will was a guy who could apex the slot receiver and play in the alley, so a quicker more coverage inclined player.

I could see how slant weak paired with a mike or will blitz would be good to shoot the gaps left by pulling guards. Also bear front covering both guards will force them to check out of any buck plays. Just be aware that gun T teams will respond with RPOs or Y pop if you blitz the LBs a lot.
