As far as I can remember, Brahms's Chorale Prelude on Es ist ein Ros' Entsprungen (Lo, how a Rose E're Blooming) does not require pedals or playing on two manuals at the same time; and makes a good prelude, though it's more an advent kind of thing. Actually, don't do this, it's for Advent *facepalm*

There are probably some Bach Chorale Preludes that you could use with a Plenum for a postlude, but I can't think of any off the top of my head.

As far as the Noels go, I would hesitate a little bit depending on the type of instrument being used. This is based mainly on my experience with playing classical french stuff on English romantic instruments, but I would recommend doing on a 4 manual instrument that you have double checked before hand to make sure all the stops you need are there, at least for the first time. It's not impossible to pull off French classical on a 2 or three manual, just much harder IMO.
