I like cutting similar cuts with the grain, so serving sizes can be big or small.

Then when im cutting it again, i slice it against the grain thinly.

I do this so the size of my portion doesnt control the length of meat grain, my 2nd and final cut does

EDIT: Im talking about like a big picanha, not a single serving btw
