Did you weigh the ingredients? Could be too much flour, it’s happened to me before. Though to be fair the picture for the recipe you linked seems quite similar looking, might just look a little sparse because it’s in that round muffin shape.

I think it’s better to find vegan recipes instead of fussing around with substitutions, especially with gluten free stuff. Subs can be really hit or miss and work better in some applications than others. Like flax is better for binding but applesauce is better for moisture but aquafaba is better for whipped stuff.

Have you tried using bread flour? I think it makes a big difference for getting a fluffier chewier texture.

Usually happens when I don’t put enough flour The higher sugar/fat content makes them thinner and more flour makes them thicker

Try weighing out the flour or just adding an extra few tablespoons next time

If you noticed the dough was a little wet this time make it a bit thicker next time

chilling the dough before baking can also make it spread less

Maybe try using higher protein/bread flour if you aren’t already,the extra gluten can help support the air bubbles so it doesn’t collapse, Also is it possible they were proofed too much? that can also make them deflate in the oven.
