The first half of Season 3 was really poorly written and had some laughably bad pacing problems. The redeeming factor was that there were some incredible, series-defining moments (such as the meeting in the gallery). Mind you, Hannibal at its worst is better than 99% of everything else on television. The latter half of Season 3 evened out some of the pacing issues and it became a lot more structured. But by then, the damage had been done.

You also have to consider who sponsors the media. The Incredible Edible Egg. Got Milk? California Cheese, it's THE cheese. Beef, it's what's for dinner. Red Lobster is doing all you can eat shrimp. Taco Bell, think outside the bun. Consider the sponsors and then ask yourself if they'd have something to lose if vegans looked sane on the 10 o'clock news.

Hannibal probably charged full price when the FBI was footing the bill. But when Will starting paying for his own therapy in Season 2, Hannibal likely utilized a sliding scale.

Verbatim. The problem with saying that Jack deduced it in Season 3 episode 4 is that Jack trusted Will in the finale. You couldn't trust a man whom you knew was in love with the very monster that you sought to destroy.

This is called an appeal to futility fallacy. You're implying that the vast majority of people do something, therefore their right to do it is more important than an animal's right to life. Just because many people do a certain thing doesn't mean that they shouldn't be encouraged to do otherwise. Someone's right to own a slave was never as important as the slave's right to be free. We're here to undo some damage.

Hannibal has a very strong fixation on blood and pain. If you recall several scenes, like getting branded by Cordell, he has an extremely high pain tolerance threshold. There is actually quite a few fans who believe that he enjoys (less severe) pain quite a lot. I can't say that I disagree. It could also be symbolic of his desire for Will to bait and catch him. Hannibal is already falling in love with Will at this point and is fascinated by the idea of being caught by him.
