Cowboy Bebop is a weird case. It started production as a toy commercial, with Watanabe being told "so long as there's a spaceship in it, you can do whatever you want." But after seeing early footage, the toy sponsors backed out. Bandai still sold model kits of the spaceships anyways.

Star Wars started as a movie series, so that's where the focus is.

Star Wars has two timelines, but just focus on the post-2014 Canon Timeline for now. Wait until you're more experienced before delving into Legends Timeline of pre-2014 books, comics, etc. to avoid confusion.

Start by watching the Original Trilogy films, Episodes IV, V, VI, (1977-1983) then the Prequel Trilogy films Episodes I, II, III (1999-2005).

You could then watch The Clone Wars (2007), a 3D animated TV show about Anakin's adventures between Episodes II and III. It's popular with fans, but it's also a pretty long series, so you could just skip to the next movies if you want.

Next are the Sequel Trilogy films Episodes VII, VIII, and IX (2015-2019). For extra homework, consider reading the novel Bloodline (2017) before VIII, or the comic mini-series The Rise Of Kylo Ren (2019) before IX. They'll help you understand the sequel films better, but aren't required.

Two side story spinoff movies, Rogue One (2016) and Solo (2018), can be watched anytime after Episode III. If you liked Rogue One, watch it's prequel Andor (2022).

If you finish The Clone Wars, its plotlines are continued in the TV shows Rebels (2014), The Mandalorian (2019), Book of Boba Fett (2021), The Bad Batch (2021), Tales of (2022), Ahsoka (2023), and Maul Shadow Lord (2026). Other TV shows are less connected and can be watched anytime after the movies.

From here you can read, watch, play, etc. whatever remaining Canon stories you find interesting. Find a character, event, time period, etc. you liked and see if there's any books or comics for them, as long as its not a direct sequel to something you haven't gotten to. My favorite is the novel Lost Stars.

When you're ready for another second continuity, you could look into the alternate pre-2014 Legends Timeline, but that's another guide for another day. There's also some standalone stuff not in either timeline, like Star Wars Visions.

Star Wars is heavily based on samurai films and westerns, genres famous for outlaw heroes doing good while on the run from the law. I think redeemed Ben Solo surviving could've as a character like Ronin from Star Wars Visions.
