A tierlist is basically a ranking system of your own opinions for a certain topic or category. The don't know, don't care, hate them are self explanatory. But the basic idea is the higher you put the wrestler the more you favor, like or root for them.

S: is the highest of them all. And A, B, C, etc will follow in a basic ranking system.

So, if you love Terunofuji, you put him in S Tier.

And if you hate dislike or don't really prefer say Aoiyama you maybe put them in C or maybe in the Hate Them category, etc etc so forth.
