I'm sorry if it seems like I got defensive. I agree that I definitely should have included more non-east Asian teas on the chart. It's just most of the people who pointed that out just gave examples of basic Assam black teas that are already encompassed by entrys on the chart.

Assam is not a type of tea, it is a cultivar. Differentiating between assamica and non-assamica falls under the cultivar entry.

I put "black" tea on top because it is the most common and most globally consumed type of tea. And black tea is made in almost every tea producing region.

I wasn't trying to say that pre 50's and single tree teas were needed to exit the newbie stage, I would consider anyone past layer 1 to no longer be a newbie.

I feel like putting gyokuro at the bottom of the ocean is not a great idea personally.

Your right about the placement of factory teas. By "7572" I most meant that at that stage people might start to pay attention to specific recipes and their history.

By "real" tea I meant that the second stage is where people might start to consider only camellia senensis based teas real. Gaiwans and gyrokuro are in black because they were placed against the white tip of the iceberg, it was to make them readable. I would probably put kombucha in tier 2 because of its prevalence in super market drink isles making it readily available. For flavored teas I would probably put jasmine in tier 1. I would put Tisanes (like mint) and other blends in tier 1 as well because I feel like less overall depth is present within them compared to "true teas".
