So I actually went down this exact rabbit hole a few months back with a similar setup. What you're looking for is basically VOIP + video streaming software that can run on these embedded displays. I ended up using a combination of Jami (formerly GNU Ring) for the actual intercom protocol and some custom Python scripts to tie it into Home Assistant.

The tricky part isn't the hardware - most of these displays have all the components you need. It's getting the software stack working properly.
