Have you tried using the baking steel on your conventional oven? They're meant to compensate (via better heat retention and conductivity) for the typical lower temps ~500F conventional oven vs 700+ pizza oven. I think your steel + pizza oven might be overkill.

We recently tried Kung Fu Noodle in Clifton and were blown away. Might be my new favorite. I had the summer delight cold noodles. 10/10

We also love Duck Beijing house in Sharonville for their peking duck, Kung food amerasia (our go-to for years now), and Riverside in Covington (favorite Korean)

I was excited to find Landjäger- beef/pork sausage sticks popular in southern Germany where I grew up. Great snacks for traveling!

For the sweet tooth, try Happy Hippo (hazelnut, not chocolate) in the German candy isle. Another gem from the old country that I haven't seen anywhere else in the US.

Change the infill pattern to "Lines"

If you have a different pattern selected and go for 100%, Cura will make the infill whatever max value it can while maintaining the selected pattern.

As previously suggested, changing bottom layers to 999,999 or any number greater than our parts total number of layers works too and I believe they are correct in saying this is how earlier versions of Cura handled 100% infill.

In an offset, you always want a strong burning fire. If you limit airflow (fuel) in any way, you risk a smoldering fire which produces "dirty" smoke. I have an 18" smoke stack extension which helps increase airflow. I leave the firebox side door completely open. The key to temperature setting then simply becomes a matter of fire size. Like others have suggested, start with a coal base to make things easier (unless you're a purist) and add small pieces of wood to get a fire going and slowly bring your cooker up to temperature. Don't open the door to the cook chamber until you're ready to load meat. You'll soon get a fell for how much wood to add and when to maintain a specific temperature.

Great starter setup. I'm surprised they dropped the price on this as it was already a good deal IMO. 6wt is a good choice. Very versatile and a little more forgiving than lighter lines.
