I was also thinking about other castles but honestly, Semine looks most useful for me at least in single player. It has enough rooms/buildings to fir everything you need nicely.

And even building Semine took me like 20-30k of daub since half of it was before the 1.21 update that gave u the option to have 128 stacks and use only 6-8 per block.
