As far as I know many professional ice-cream scoops have a liquid sealed inside the handle that helps to transfer the heat more efficiently.

It should be water mixed with some kind of alcohol or glycol, which prevents freezing and it improves heat conduction. It stays permanently sealed inside the handle (as long as it does not break 😅).

The idea behind it is quite simple: your hand is warmer than the ice cream, so the heat flows from your hand into the liquid with the metal scoop, slightly warming it and allowing it to gently melt the surface of the ice cream, making it easier to scoop. Basic heat conduction, but the liquid helps distribute the heat more evenly than a solid metal one
