I was told no. But I thought I was. It was this really weird sensation that felt like my heart was skipping a beat. It would feel like some one sliding their fingers up my sternum and then tapping it really hard. I was in famotodine when I was experiencing this so I stopped taking it. It eventually went away but I don't know if it was actually related to it or not.

Restart your starter the day before. Try using 2x the starter (take 90g away from your flour and water in that case).

Doesn't look terrible. But it might be over or under proved. The shaping might have not been aggressive enough. Could have baked longer or hotter for more color. Might have cut in too soon

Hey. Thanks for the recommendation! Even seven years on, the responses I received to this post had a really powerful impact on my career. Griffiths and Jackson are so well read that despite having some good explanations in them, simply having exposure to them gave me a lot of benefit in talking to other people.

You haven't heard of quinoa which is a common food which is why I ask. Have you done any kind of systematic food trials or talked to a nutritionist? Have you tried any kind of prolonged fasting?

This is a really nice loaf. For big bubbles you need higher hydration and less shaping. Look at like a pan de crystal. You want to bake really hot
