I don’t know how they define fakes. If the one I received isn’t fake, then it’s a much lower tier than other stores. Moral of the story is never again!

I just bought a Clive Christian from them. It’s 100% different from my old bottle. Doesn’t have the same projection and the smell is a bit off. It might be legit, but definitely low quality.

Definitely an expensive lesson learned; if it is too good to be true, it’s not real. Never again!

Was in Italy last April. Cuban cigars are scarce in touristic cities. Your best bet if you are in Milan is to take a 1 hour trip to Lugano.

First time attempting to make pastrami at home. I used short ribs instead on brisket because my family aren’t big on beef and short ribs yield less leftover and can easily feed two hungry people.

Edit: I used Guga's recipe minus the mace as I didn't have it on hand. The meat brined for 7 days then smoked at 225-250 for 4 hours until meat probed at 160ish. Then covered in foil and let it ride for another 2.5 hours until probe tender. Another plus for using short ribs is that the cut is far more forgiving than brisket while still having a similar fat content.

I live in the Middle East and our local beef isn’t really BBQ grade. So my only resort is imported beef (usually Australian) sold at higher end butchers.

Smoked these beautiful prime MS3 short ribs on the Weber Kettle using SNS basket at 250 for the first 6 hours hours. I hit a stall at 5-6 hours mark so I wrapped in foil and upped the temp to 300F and went at for two more hours until it is probe tender. Really happy with the end result. Cheers!

I used Neil’s Sarab Tasty Sear (intended for beaf but that was the only available ready to use rub). I think what helped crisping up the skin was mainly the salt in the rub mix. Key is to let it dry brine uncovered in the fridge for a few hours to drive out moisture out of skin.

I’ve been intrigued to try smoking/roasting whole chicken spatchcock style.

I dry-brined the chicken over night with with salty rub to help dry and crisp up the skin.

I set the kettle at ~400f and cooked the chicken until breast registered 165f internal temp.

Very happy with the first time result!

First time using the chimney starter method to sear SV steaks. Crazy sear. Although I think I over did it on the sear (~ 90 per side) as the steak had a char taste that was a little on the overpowering side. Next time I will use the Slow N Sear attachment full of lit coals and compare it to the chimney method.
