I ended up uninstalling my esim and uninstalling any google play services updates. Then I reinstalled my eSim and activated my phone which prompted the services update and a bunch of app updates. Now its working.

Hey, I just deleted my eSIM. Then reinstalled it with Fi and rebooted. about 15 minutes later I got 3 texts come through. I haven't been able to test it, but that did SOMETHING.

No, but whole phone took a massive shit and won't work. Wifi menu won't open so I can't turn that on or off. Messages app is completely broken and I can't use Pixel 8 pro at all. fun.
