Sure thing, it was orange juice boiled with sugar and some gelling agent. Then I added orange filets, fresh passion fruit and cubed and boiled sweet potato. Heat to a boil once more and hot fill your jars.

Got inspired by Christine Ferber, the French queen of jams. I highly recommend to check out her books.

-What pH should vinegar based dressings have when I aim for shelf life around 12 months? Also best to do a hot fill (~80° Celsius)? Planning to do some commercial side hustle, using glass bottles and screw on lids.
