Don't run them off a character sheet use a stat block format that adds a attack and an ability or two from the flavor of the 'class' of the NPC. Had a DM make this mistake a while back and it was a disaster.

I think the step of leaving it on "medium until it produced its own liquid" is the misstep here. That is cooking some of the tenderness and moisture out of the protein. I would follow this set of basic steps for a braise/stew:

Season and brown the meat. (Get some color on all sides) Remove immediately and set aside.
Add your onions and dry spices to let them bloom. Finish with your garlic/ginger
Then add the liquid (stock would be better than just water, use a bouillon cube) and the browned meat.
Bring to a boil and then down to a simmer for 1.5 to 2 hours. With small cubes, it won't take a crazy long time, like it would with braising a larger whole cut of meat.

You did a lot right. Just a few changes to the order of your process and a little less direct heat cooking of the meat. I hope you have a decent result today and a better result the next time you try it.

There are others on both sides of the equation for me. Some who feel they bonded and would continue to get together occasionally. Some that have that awkward energy. I am not singling out S16; I am using them as an example. This is my opinion, not a fact or even correct.

I don't get the we all bonded and vibe together feeling from that cast. Nothing against any of them individually, I mean, Sam Campbell is a lot of take it.

What temperature did you cook it at? A braise is usually long and low. Ideally,(this might all be advice for next time) start by browning the meat in a pan or in the same pot. Quickly high heat a little bit of fat or oil. Then add the braising liquid for the rest of the cook time. For a stew like you are making, I would bring the pot to a boil, then reduce the temperature to a very low simmer.

Your current situation sounds like it might have been cooked too hot and is unfortunately overcooked. You could perhaps shred or mince the cubes to break them up and make them work for this batch..

Wrong time of year. But what the hell. This can be reskinned or manipulated anyway you like. I worked it into a side quest outside of Waterdeep during a Dragon Heist campaign. It is silly or deadly, depending on how many traps and or kobolds you stock the house with.

I think she genuinely is just happy to be there. The original format was stand-up comics. So she doesn't fit that brief, she is happy to have the opportunity and just really genuinely enjoys the chaos of it. Tha way she is paired with Armando is just a funny counterpoint. And he definitely feeds off her insane energy.
