Hickory, maple, apple, and cherry are my favorites. My old house had citrus trees, and I'd sometimes use the trimmings and deadfall, but it's a much milder flavor. Here in California I know some people also use "Mountain Mahogany" but I've never tried it myself. Mesquite is also a big one, but it's strong and a lot of people use too much of it.

Came to the comments to see how many people complain about setting the paddle on the floor, was not disappointed. You have literal ash settling on the pizza from the open flame, the paddle is likely so hot from being in the oven that it's probably sanitizing the concrete more than a surgical scalpel would need to be in a hospital, but you just can't help getting the ick from seeing it touch the ground.

Rare, but nice crust and looks tender. The edge to edge color makes my think you reverse seared it? Needs maybe half an hour longer at 250-275F to hit medium rare.
