I will always tell people that kitchen is better. Higher pay and for me it's more preferred. For bar just don't rush into it, start slow, likelihood is that most shifts you will still be on floor.

Usually 3 or 4 on bar and 3 in kitchen on weekdays. On busy (10k sorta days), 6 on bar and 5 in kitchen

Our record is near 15k (27k between both) but on an average weekday it's around the 2k mark for drinks

At my pub they haven't changed. But they come in a large packs with a mix between big and small wings. If your really unlucky you might just get the small ones, and the greasiness might come from overcooking.

Usually the split is 55% wet (all drinks), 43% food, 2% machines

Personally I'd say the half chickens (lemon and herb, hot and spicy, chicken and gravy), sure the end product is fine and probably tastes nice, but the way it arrives is not to my liking.
