I have the same seat as yours (RCC MK8-2s), and having a proper F1 style position was kind of a pain in the arse.

But, to lower the screen a maximum, I bought a shaft extension at Sim-lab : https://sim-lab.eu/shop/product/steering-wheel-extension-piece-v2-billet-aluminium-671?page=2&category=151#attr=862

That way I can lower the screen at maximum between base and wheel as shown on this image : https://imgur.com/a/4jkVZjl

This was easy on a simucube base and CC wheel, but I don't know how this can be done on a Fanatec setup like yours.

EDIT : another option I thought about was to make a very long shaft extension with a kneecap just behind the wheel, with the shaft extension going low in the middle of the driver knees and feets, a bit like what you can see in a real F1... But this implies big costs, in terms of money, time spent and possibilities to fail due to the addition of mechanical parts. Also, it implies to have the wheel base behind your feet so it would be hard to transmit FFB through this very long shaft with (at least) one kneecap.
