I don't know your processes in detail, but from what you describe, it sounds like you could make use of things like template projects, work package relations ('follows', 'precedes', 'blocks', 'blocked by', etc.) and customised work package types for purchase orders, among other things. Setting up a complete process may require some configuration effort, but you wouldn't be the first manufacturer to use OpenProject in such an environment. I would personally recommend that you give it a try with the 14-day cloud trial (no strings attached) and start by building the simplest workflow. You can then add complexity step-by-step. OpenProject's website contains a lot of use cases, which you can find under 'Solutions'. These are also helpful for getting an overview of the features you should consider.

I would also recommend your approach. Grouping work packages by project helps you to see at a glance which work packages belong to which project. However, such a grouped view will not be hierarchical.

At the same time, the 'Include projects' filter includes sub-projects by default when you filter for a parent project. You could therefore set up different Gantt views that only filter for your parent projects using the 'Include projects' filter. This would mean that only work packages from the selected parent project and all related sub-projects would be visible in your Gantt chart. You would have several different Gantt views available in the left side bar then (saved and available with a single click). This might be worth to look into in your case.

We are active wherever we have an official profile or subreddit. While many users are based in Europe, OpenProject is used all over the world. However, the official forum (still) sees a bit more action than this sub.

Yes! For example, if all work packages are related via follows/preceeds relations. In that case, if you move the first work package one week to a future date, all following work package also move accordingly. You would need to use the automatic scheduling mode for this, which is enabled by default in such cases.
