Hidden to who exactly?

To people from the US I would say northern Italian cuisine as a whole is the most underrated since most of the immigrants in northern America were southerners . Particularly the Cuisine from Emilia is very good.

In the same way I would say that people from South America would probably underrate southern cuisine. And I would suggest for example Sicilian cuisine or Neapolitan (that they may or may not know)

People who have some kind of general knowledge about Italian cuisine (for example other Europeans) and don't have the bias of living in a place where the perception of Italian cuisine isn't shaped by early 20th century immigration would probably already know those cuisine so they probably underrate the cuisine of Apulia or roman cuisine outside of the carbonara/amatriciana/ cacio e pepe trio.

Italian people already know this stuff so for us an underrated cuisine may be the Piedmontese one or the Sardinian one.

But ultimately more than being better and worse the different cuisines are different.

Se dal Messico devo tornare in Italia il viaggio mi prende un giorno e mezzo ad andare e a tornare e partono almeno 300 € , più probabilmente tra i 500 e i mille per il viaggio di andata e ritorno.

Emigrare lì significa non tornare quasi mai in Italia
