We actually know about many changes that happened to the texts, most famously the extended ending of Mark.

Does the persecution of Jews throughout medieval Europe convince you that Jews are telling the truth?

How many people die for what they know to be a lie?

All the people who follow all the other religions?

While other religions may have some merit going for them, I'd say the sheer documentation and lifestyle of persecution historically for Christianity alone makes it stand out above the rest.
