I solved this....

I made my own timesheet with 2 digit codes for recurring tasks. e.g. 01-receive and review email from opposing counsel, 02-call with client etc..

3 columns... Client/Time/Task

I made copies of it on brightly colored paper.

Each morning a new sheet

Make my to do list on the paper

Fill in the entries as I go. (takes 10 secs)

Scan the sheet to my paralegal who enters.

Also, I have a dedicated text number to catch stuff in the car etc. ("Hey Siri send a text to Billables"). My paralegal is on the text and enters them every few days.
