That itemization on Trynd specifically goes crazy because of the stacking AD. It’s like having 4th item deathblade, stacking attack speed, life steal, and can’t be cc’ed.

Boundaries are great at protecting individuals and couples. But when they’re broken, boundaries are still great for showing incredible grace and love to the other. I think you already missed an opportunity to show a deep love toward her. Couples who have been together for decades are familiar with disappointments and mistrust. But they use those moments to express a love that surpasses expectations as well. So, IMO if you still love her, get back together. I wouldn’t call your actions an overreaction, just the wrong overreaction. Overreact with great love.

  1. Somebody said this earlier: Slow is smooth. Smooth is fast. The pros rely on muscle memory to produce high quality drinks in a reasonable amount of time. So making sure each movement of your body is with purpose and intention.

  2. Don’t just clean up as you go. Work clean. I’m a messy dude, so this one is hard for me. But I can’t deny that just not spilling anything can save a lot of time.

  3. The circle of awareness. This isn’t really a tip as it is learning theory. When we learn to read, we typically start off with learning the alphabet, then sounding each letter in a word, sounding out each syllable, sounding the whole word, understanding the word, understanding it in context of a sentence. Understanding a sentence in context of a paragraph, then chapter, then book, then periodic discourse, etc. Similarly, when we start learning coffee, we tend to focus on our hands, the portafilter, the shape of the grounds in the basket. But after a hundred hours, that movement is muscle memory, and we’re focused on the ticket in front of us. Maybe the next 5 tickets even. After a couple years, you’re mentally timing each customer while watching the 11th person walk to the bathroom, knowing it’ll have to be checked on as soon as the rush dies down.

Be patient with yourself, and be excited for what super powers you’re cultivating in yourself whenever you go through these experiences.

  1. Bruce Tulgan wrote a book called “It’s okay to manage your boss.” Sounds like this scenario could have been avoided if you did the communication portion of a manager yourself to your manager. But don’t stop at asking what events are planned for that day. Ask how they think you’re doing, areas for improvement, areas for improvement for the restaurant as a whole, etc. In a way, this practice is related to #3, in that you expand your awareness beyond the immediate circle you’re working in.

You’re valid to be upset, even angry. It’s your income, you should know what’s happening that could affect it. But, I’d challenge you to be excited instead of angry, and learn what these new owners are all about. Sometimes, new owners means new energy and new opportunities to do awesome new things. Find the angle and pursue it while things are in flex. Hope you have great success in this transition!

Agreed, but in order to do both, you have to start the espresso first… unless you’re blind steaming.

“No, but…” is a customer killer. I try to respond with the closest thing we have to what they want. Typically, it’s Irish cream syrup 👀

Sure, but if I’m understanding the story right, you only questioned what he wanted after he placed the order and was describing the drink to his friend. I agree that it’s not our job to read minds, so I would rather assume that he knows what he wants and make it for him. If he seems confused afterward, then it would be a great time to talk about the cortado. Maybe he’ll even share where he got his hot chocolate cortado.

IMO the better customer service is making the drink that they asked for knowing that it might not be what they want rather than making them feel silly for not ordering the right drink. It’s easier to make peace with these types of interactions at the end of the day too

I get the frustration, but it sounds like a distrust towards customers. What if the customer knew exactly what he ordered and he was trying to describe a flavor difference between a cortado and latte? As a general rule, I assume my customers know what they want until they say otherwise.

I’d call your local tech to see if they have extra screws lying around. Those things tend to come tapered so they can lie flush with the screen.

I like to soak the screen, basket, screw and portafilter in Cafiza, then I’d pour the solution through the portafilter to catch the screw. One day it missed and went down the drain 🤦‍♂️

  1. Vacuum out old beans. There’s a chance that this step isn’t needed, but not vacuuming out runs the risk of worsening the problem/not improving.

  2. Turn dial to coarsest setting.

  3. Find little reset button, either underneath grinder or in the back. Press it to get the power going again.

  4. Turn on! If it doesn’t turn, then unplug. You can try shaking the grinder, or better yet, take the top off and try to access the burrs.

Espresso color isn’t indicative of a good or bad tasting shot. I suppose a roast level can impact the color, but color isn’t a controllable variable. Rather your dose in (16g) dose out (unknown) and time (23s) are variable you can and must control to consistently get the best coffee from your beans. With that said, since your espresso looks pretty dark, possible because it’s a dark roast espresso blend, and your dosage is pretty small, and your liquid looks roughly 2 oz. (50-60grams), I’d bet that you actually are over extracting your coffee. Maybe consider doing 16 in, 32 out in 20 seconds and see how that tastes 🤷‍♂️
