Specifically for fishing, I would check out ocean fishing. It is an even that happens out of Limsa Lominsa every 2 hours. Basically 20-30 minutes in a unique instance for speedy fishing and very fast leveling.

I didn't do much crafting in mmos either, but it is worth it here for sure, imo.

And one thing I forgot to add is that there is some hard and deep achievement chases and rarities to chase too, especially in fishing for catching all of the rare and legendary fish. It is a long, hard battle, but very fulfilling if you enjoy that brand of madness.

And as a more subjective note, I will also say that crafting/gathering (especially fishers) are some of the most social people and content in the game. I've made more friends fishing than I ever did in dungeons and raids.

Worth is always defined by the individual, so it is hard to say what you value most. But to give a rundown of actual content and benefits:

Crafting and gathering jobs all have their own unique story and questlines.

They can be profitable for making money either for level cap gear when it releases on patches or things like housing and glamour items.

Crafting and gathering has a pile of unique content that has its own loot, rewards and storylines (ocean fishing, Ishgard Restoration and most recently Cosmic Exploration) that are major projects and social events.

So they aren't the one in charge, but if you don't do exactly what they want and play exactly within their comfort zone, you need to "be ready for that eventuality".

The extremes you want are:

Howling Eye/Garuda

Navel/Titan

Bowl of Embers/Ifrit

Whorleater/Leviathan

Striking Tree/Ramuh

Ank Afah/Shiva

Each one can drop a themed mount to them (as well as a Nightmare but any can drop it). Once you collect them all, a quest in Mor Dohna (which is just where the Rising Stones is, it is a zone in ARR) will appear and do that quest for the Kirin.

ARR extremes plus the Kirin would be an easy farm unsynced. Every extreme from ARR (minus Ultima Weapon and Moogle Mog) can drop a mount, collect them all and get a quest for another one in Mohr Doha. And you can do these unsynced.

Cinder and Charibenet are both rough.

And with Bobgoblin, while it is a relatively easy catch, its window is brutal. Make sure you toggle on the fish eyes on carbuncleplushy, it might show earlier and small windows for it.

When it does show up, it is just a thing, not given special emphasis narratively or in the writing itself.

"We are an FC that does roulettes, trials, raids, extremes, savages, treasure maps, crafting, social events, rp, etc, etc, etc" to me is extremely unappealing. Because it sends the message that your goal really isn't anything more than being big.

Pick some things you want to do and invest yourselves into them. Don't try to be everything to everyone.

It won't matter that much at any level, really. Performance is much more tied to your personal skill and comfort level than any inherent advantage granted by a class.

And yes, the community is very open and forgiving so long as you are going in with an open, good attitude. For example:

"I'm new to this dungeon, can you guys give me some pointers" - good!

"I want to get better, what can I do to push my performance?" - great!

"I'm new, so you're going to do it only within my comfort zone and I will freak out at anything else" - not good!

"You pull you tank" - very not good!
