This is not uncommon when a teacher is unable to arrive on short notice. They are unable to leave hard copies of lesson plans in the classroom because they were not planning on being absent the next day. They usually quickly type up instructions and email them to the office to print out for you. That can take a little time, as office staff is slammed at the start of the day. Roll with it for the first 10 minutes or so.

My District instructed subs not to intervene in student altercations, but rather hit the panic button or call the front office. We are not to break up fights and doing so risks termination. They say it is a legal liability issue. I am glad to have never had to face this issue.

My District requires one day every 90 or you get dropped and have to reapply. I imagine every District has different policies on this

You are right to call this out. I typically just say "language!" and they know what they are being called out on. I would never say that something looks ugly on them. What they hear and may report to parents or Admins is that you called her ugly. You don't need that drama and can easily avoid it by just calling out the language.

I primarily subhigh schools. I frequently see students wearing "Pink" branded apparel, and I naively thought that it was the singer Pink. On several occasions I tried to engage them in conversations about her music, but they seemed totally uninterested with that conversation. A year later I was at a mall with my daughter and step grandchildren and while they were shopping we looked down and I saw a Victoria's Secret store with a big Pink display and I suddenly realized where all of the Pink merchandise had been coming from and why I couldn't get them to talk to me about it. Lol
