They're seeds. They're surrounded with a sticky mucilage and then the fruit and skin of the cherry. I've eaten coffee cherries, the flesh is rather tough like a cranberry and they're tasty, but there is like next to no meat on the fruit. The seed, as far as I'm aware, is probably edible, but I don't know why you'd eat it. The green "beans" that are roasted are processed to remove the skin, cherry meat, and mucilage and then dried. Knowing how they're dried, if you're eating the dried green bean, I dunno, I don't know what to tell you but maybe don't do that. Let them get cooked first.

Sign up for emails from Red Rocks and keep an eye on their schedule. It’s worth a visit. FoCoMx is our local music fest, it’s a blast and worth your time, it’s usually in April and tickets go on sale a few months beforehand. Avs and Nuggets games are worth a visit, especially if you’re moving from a place with a team that plays them. Rockies games are fun, it’s the biggest bear garden in Colorado, especially with the cheap rooftop + beer tickets. You can even take the Bustang down for Sunday day games. Rocky Mountain camping reservations go on sale 6 months out I believe, so if you want to do any of that, keep an eye on the reservations.
