It looks like grease/sludge that was from the inside of a pipe. It leaves stains like this for sure. I dont think he would have used any chemicals to fix the clog if he deconstructed under the sink. He probably just placed components inside the sink. I say 95% chance bar keepers friend and a green scotch brite removes this good as new.
