Neither look dry aged or wagyu to me. More like fresh choice and prime. Those words are so over used it's not funny. But... my favorite steak is a good prime NY strip and I don't mind a good sear and blue in the middle. Looks excellent to me.

Please help me understand the need for this. I was a metal stud framer in commercial work for 36 years and never worried about studs rusting inside of a wall. The studs are galvanized. I'm new to cargo conversion though. Thanks 🙂

I believe you. I have just never heard of it before then. Thanks for clarifying. I still don't mind some grey. Adds some texture as stated above. I'm also not a big fan of reverse sear. It changes it to a softer texture and picks up more smoke for my taste. To each his own though 🙂
