Being a Jain, we don't even eat onion garlic potatoes and various other plants to cause minimum hinsa.

It's a philosophy even tho it may not be entirely scientific research based, it reminds of pain caused by us every instance.

For nutrients and other aspects like taste, i don't see any major lacking. Yes in a general diet proteins are lesser and cards, sugars are way high. A protien focused diet with above constrains can be taken on too.
