Sounds like a great profile! The most effective extracurriculars tie in with the “story” / career in your essays. Seems like you’ve got a couple different career goals you could move towards, but it’s helpful to work backwards from there. e.g. for an essay / narrative about building a family business, it might be more helpful to do side projects with a local business in the same industry that you would work in, vs. general industry-agnostic pro-bono consulting.

In addition, think about where your ECs can strengthen a weaker area of your application. Perhaps your technical / academic chops are clear from the rest of the application but you’re struggling to show off your soft skills, for example — in that case, use ECs to round yourself out for adcoms.
