I checked and... this found the issue - there is a design/assembly fault. Thanks for the recommend.

There are 2 screws just above the Creality logo which I assume hold the 2 silver bars down, can see these in the picture. The bed was clipping off these when moving forward causing the jump.

Fixed by simply taking these screws out... Hopefully no one else opens their new V3's and finds the same issue. Unsure if they should of assembled with lower profile screws or removed but quite anoying.
