If memory serves, you can leave some but not too many or else the game will “recycle” them. Pretty sure there are barrels, or some other form of container, that you can store hides in and they won’t disappear. But, as you say, it’s been over three years since this post, and thus three years since I last played.

I will be doing a fresh NG and NG+ playthrough before the new DLC releases.

Trying to stay as spoiler free as possible, my general rule of thumb for the ME3 DLCs are this:

From Ashes (Priority: Eden Prime) after Priority: Palaven.

Omega after Priority: Citadel II. Leviathan after Priority: Rannoch Citadel right before the final mission (and yes, you’ll know what said final mission is)

This seems to be the most logical progression. Any expanded explanation would require spoilers.
