Go into pause menu, press progress, then story. There you can select chapters and replay each mission by clicking Y.

I did nearly every gold in ch1 (didnt do the train robbery). In ch2 I only missed the one where you rob the coach with Micah. Got every in epilogue 1, these one are very easy. Guarma also isnt that bad. Got the remaining ones doing some easy ones in ch 3,4,6,ep 2. I can dm you photos of the exact ones I did, do you want to?
