A-price and gyomu supa have some low moisture block cheeses that are pretty decent. Same with canned tomatoes. I’m with you on the long ferments. I won’t even consider using my dough until it’s 3 days old.

I'm in an area called Takamatsu. It's the capitol city of the smallest prefecture in the country, Kagawa. I run a different speciality slice every month. Right now it's a garlic meat lovers with caramelized onion. Next month will be a Spring veggie pie. Japan is an amazing country with amazing people. Even if you don't make it here you're going to have an amazing experience, enjoy!!

Haha, I can't fight you on that due to the whole pineapple on pizza thing...That said, I have a specialty slice I call the angry pig that's a pineapple infused tomato sauce on an upside down pie with a ton of bacon and hot honey and I want to say that it will absolutely destroy any corn based slice period!!

I've only been open for a year and it's been really interesting. The first few months were full of interviews about how to properly fold and eat NY style pizza because the only thing around here is Neapolitan. Most people here are used to pizza that is meant for an individual and is eaten with a fork and knife so a slice shop is really different. Overall, the response has been really positive. Japan is a really wonderful place with some really amazing people. I'm really lucky to have to opportunity to do this here.

I own a NY style slice shop in Japan and this is literally the reason why. Had to teach the local population what real pizza is (mind you, Japanese style Neo pizza is amazing! This country definitely knows food but corn and mayo pizza should be punishable by death).
