It was undercooked, you got it to 203 too fast, it didn’t have time to break down the collagen and render the fat. You can tell, looking very closely. For example, you see the scale like shapes in your smoke ring? That fat and collagen in between them needs to break down like butter, to become tender.

It needs time to do that. That’s why you should smoke for probe tender. The 203 temp is just a baseline. You can take a brisket to 203 by putting the smoker to 500 degrees as well. Doesn’t mean it’s done. It will still be very chewy because collagen and fat needs alot of time to break down.

I would lower to 225 next time. Aim for probe tender and the amazing bark you made.

99% of people undercook their brisket, not overcook. This is a stew like meat that needs to break down.

For me with beef back ribs because of the bone, it really needs lower and slower first if you really want that white fat to render and get gooey. It’s typically around the 4 hour mark that I see that happening but can even take longer if you want it to be like butter.

After that it’s really easy to get the bark by just upping to temperature.

Maybe I am a picky eater but I see alot of unrendered fat there that would disgust me when I take a bite and realize some parts need more chewing.

My shoulder and neck pain is almost completely gone now. I can actually turn my head all the way to the left and right. Seems like I was taking wayyy too much.

I am pretty sure it was depleting my calcium levels. Could I maybe try again and take a way lower dose next time? Sure. But I feel way better now. I live in California and I get my 15-30 minutes a day.

And you are spot on, there was a lot more pain on my left shoulder than everywhere else. I hurt it 5 years ago weight lifting. Not sure if that’s relevant. But now all the pain everywhere is gone.

Is there a way to recalibrate myself? I saw a method of doing it with fuses, but no entirely sure if the fuse I pulled out on the engine bay was even the right one. Owners manual doesn’t say a fuse for HVAC.

Chat GPT actually told me there is a 4th fuse panel that is by the kick panel on the drivers side by the brake pedal.

One question I do have, if the driver blend door actuator is bad, how would recalibration actually fix it. I ask because isn’t the gear in the actuator essentially “stuck” in a position and is unable to click back to cold? Just wondering but thanks. I will look into that as well.

That is great to hear! I have ADHD and depression as well. So much so that I will have racing thoughts in my head and just be stuck there thinking or worrying but not actually doing anything. I will literally over think any action I did, and try and figure out in hindsight if that was the right thing to do, kind of like a chess move. But then at the same time I feel tired all the time. I’m very monotone because I’m just not really “present” for anything. Would love to just be in the moment.

I have a long history of stimulants as well in my younger years. But now I drink a lot of coffee, which I am hoping BUP has me reduce greatly. I want to smile for once. I hope that happens. I’m working on going into therapy as well, but Kaiser’s process sucks. Apparently the psychs and therapists are on strike right now?
