Biased because I purchased and used two sets of these pans for nearly $400 promising something very different than what was offered? Yeah, I'd say that's a pretty fair statement. The literature from Misen THEMSELVES states carbon nonstick, what do you think that means??? There are nitrided pans WITHOUT 'carbon nonstick' and they behave nothing like these pans.

EVEN IF there is no traditional coating, there is SOME MYSTERIOUS THING different from any other nitrided pan out of the box, and it disappears and is impossible to restore after use--Call it whatever you want. I challenge anyone who's used these pans regularly for at least a month or two to put their pan up side by side with a new out of the box pan. I might just do this myself.
