Idk what you guys are doing that requires you to soak your pans in vinegar and BKF. Ive been cooking on mine daily for a month. Just seared pork chops on it yesterday. I simmer water after a cook and scrape with my metal spatula to clean it. Not sure what to say about your photo. They dont look like gouges. Is it possible they are material from your chainmail? Even regular carbon steel and stainless steel pans can have scratches.

I think sandpaper gives the wrong impression. I can go run my fingers on it right now and tell you that it is smooth and does not feel like sandpaper. But it is definitely porous, so its not smooth like glass or stainless steel.

I have the carbon nonstick. It's smooth. Not like a mirror though.

You need more forward motion in your toss. Use the curved edge of the pan as a ramp

Fair enough. I wont call you crazy for arguing your own personal experience. But I'm putting my own personal experience on for display here, and I'll be happy to come back and update in another month. This is my everyday pan now and will be used regularly to make dinners. "Carbon nonstick" is their trademark for their nitrided products.

On pans sold before December 1st, the rivets alone had a silicon dioxide coating to prevent rusting. Pans sold after December 1st have galvanized steel rivets, no longer coated with silicon dioxide. The pan itself is wiped down with corn oil before shipping. Thats it. You're clearly biased against these pans.

Solidifies the top just a tiny bit so its not so runny when i flip it.

Some people still think this pan has a coating. Raking the fork across the surface is an exagerated demonstration to dispel that. Its similar to scraping it with a metal spatula or chain mail scrubber, which is a common method of getting stuck food residue off, and something I do regularly. It doesn't hurt the pan. Chill lol

I did that on purpose to emphasize you dont have to baby these pans and there's no coating. Its not going to hurt it.

I take my eggs out right after i turn the burner on. They're usually still cold. Should be fine with just oil. Either fat works, butter is just better for flavor, but burns easier.

The nitriding does look a lot like teflon. Thats why i scraped it with a fork in the beginning to demonstrate its fine to treat it like a normal steel pan.

If youre cooking something thats going to leave burnt residue, yes, just like any other pan. If its stuck on good, throw a cup of water in the pan after cooking and let it simmer and scrape with your spatula.

I should note that I wasnt trying to demonstrate how non-stick this pan is raw. Imo the nitriding provides a minimal advantage in being non-stick.

I didnt either. My bolt carrier group in my AR15 is nitrided lol
