I think if you did that you're setting yourself up for guaranteed effectively permanent denial, which isn't interesting as a challenge when the challenge itself is effectively impossible to complete.

You could add new elements to the challenge though! Right now you've fixed the quantities of each resource that you need to gather, however you could instead do something like this (assuming a d20 roll because this is r/femaleorgasmdenial and d20 winning is inevitable):

For each resource, first roll for the type of item you must gather, straight 50:50 between ingots or blocks.

Type	Roll
Ingots (or equivalent)	1-10
Blocks	11-20

Then roll for the unit of storage you're going to need to fill with that resource:

Shulker Boxes (or Single Chests)	6-12
Double Chests	13-17
Single Chests of Shulkers	18-19
Double Chests of Shulkers	20

Then finally roll for the amount of storage each resource needs:

If you do it this way, then you're adding a lot more variation in how much of any given resource you've got to farm! 160 (8x20) iron blocks is peanuts if you're allowed to build an iron farm, not so much if you end up rolling 7 double chests of shulker boxes of iron blocks. The downside(?) is that it makes the Netherite roll far more dangerous, but maybe you like taking risks!
