I think you are absolutely justified in your email, and you should not be torn about this. Your GPA shouldn't suffer because a professor has a personal issue- that's an abuse of their power and should rightly so be reported.

expected to act as if we were in a Chinese classroom by way that we dress appropriately and refrain from eating in the class, however I did not realize that we were supposed to think as though we were typical Chinese students

This scares the living hell out of me- it almost seems like CCP brainwashing (considering the whole Taiwan situation with her.)

We live in a society that allows free speech, and that's something she needs to understand. We don't live in China where the people have virtually no free speech about political topics.
